L'Astrolabe is one of the landmark fine-dining restaurants on the east coast of Saint-Martin, set in the heart of Esmeralda Resort on the hills above Orient Bay. The dining room wraps around the resort's main pool: white-linen tables right at the water's edge, palm trees lit up at dusk and tropical gardens in the background.
The cooking, led by chef David Grabowski, is modern French cuisine with Creole accents, recognized by the Gault & Millau guide. The menu showcases local seafood: grilled spiny lobster with vanilla sauce, cognac lobster cappuccino with foie gras ravioli, daily fish fillet Creole-style, alongside bistronomic classics such as Charolais beef tenderloin seared on a lava stone or Landes duck breast.
L'Astrolabe offers a three-course set menu around €58, themed nights (Friday lobster night, surf & turf specials) and a daily breakfast service from 7:30am to 10:30am. Practical tip for visitors: book ahead in high season, request a table by the pool for the evening lighting, and combine dinner with a stroll on the nearby Orient Bay beach.
