The rooftop cocktail bar of Saint Martin

Whenever you ask around for a high vantage point on the Dutch side to grab a drink under the stars, the answer almost always comes back to Mimosa Skylounge. Set on the rooftop of the Casino Royale in Maho, the venue was designed as a proper big-city rooftop bar, then dropped into the tropics. You take a quiet elevator up and walk out onto a terrace anchored by two giant bougainvillea trees glowing pink and purple, woven rattan banquettes, burnt-orange cushions and a ceiling of warm fairy lights.

The DNA of the house is signature cocktails. The bar program is run like a chef's tasting menu, with what they themselves describe as the longest signature cocktail list on the island, rare infused spirits, a serious champagne-on-ice selection and a tight wines-by-the-glass list. Crowd favorites: True Love with lavender notes, Rainforest (gin, pineapple, cucumber, mint, aquafaba), a reimagined Espresso Martini and tikis served in sculpted ceramic mugs.

On the plate, Mimosa plays the international sharing card with chefs Alina (sharp Japanese cuisine, sushi and sashimi cut to order) and Ken (small plates drawing from Asian, Latin and Mediterranean street food). You graze on flamed edamame, ceviches, gyozas, tartares, yakitori skewers, plus a short dessert list. Portions are intentionally small so you can order across the menu and stretch the night.

Mimosa is closed on Sundays. From Tuesday to Thursday and Mondays, doors open at 6 or 7 pm until 1 am. Friday night is the big one: DJ at the decks, disco lighting, and the rooftop turns into a full after-dinner party until 2 am. Reservations are strongly recommended, especially for banquette seats near the bougainvillea. Smart casual dress code. Free entry, parking lot in front of the casino in Maho.
